A Leiths School of Fish

Our Lower Sixth Leiths Cookery students were treated to a fascinating lesson on fish filleting from The Great Cornish Food Store’s expert, Tom.

Using whole whiting, Tom guided our students through the tricky task, with some expert tips, including starting with the fish’s head facing your dominant hand and belly away. It was fantastic to see the thrill our trainees felt as they mastered this task and successfully removed perfect fillets.

Well done to all of our apprentice fishmongers, and a big thanks to Tom for once again imparting his knowledge through this valuable partnership.
