¼ red cabbage
4 spring onions
1 red apple
Handful of sultanas (optional)
2 tablespoons sweet chilli sauce
4 tablespoons mayonnaise
Salt and Pepper
Remove the tough core and outer leaves from the cabbage. Shred the remaining cabbage very finely and place into a large mixing bowl.
Peel and grate the carrots and add to the bowl.
Remove the root, dark green leaves and outer layer form the spring onions. Chop the remaining onions into small pieces and add to the bowl.
Wash the apple and remove the core then chop the remaining flesh into small chunks and add to the vegetables with the sultanas (if using).
Place the sweet chilli sauce and mayonnaise in a bowl and stir to mix. Squeeze the juice from the lime and add to the dressing to taste – add gradually and taste to ensure the dressing is not too sharp.
Pour the dressing onto the coleslaw and stir to mix thoroughly.
